- 50ml Extra virgin olive oil
- 2 garlic cloves
- 500g spinach
- 50g flour
- 750g milk
- 50g butter
- Salt, white pepper and ground nutmeg
- 6 eggs
Preheat the oven.
Heat the olive oil, add the two garlic cloves and fry until golden.
Add the spinach and cook on a low heat for 5 minutes.
Add 50g flour to the mixture and mix completely. Cook for 3 minutes (mixing constantly with a spoon).
Pour the milk over the mixture and stir well for 10 minutes. Add the butter, salt, white pepper and ground nutmeg.
Pour the mixture into an ovenproof dish. Crack 6 eggs over the surface of the mixture and grate some cheese over the top. Bake in the oven for 10 minutes.
